  21.回锅肉,色香味俱全,颜色养眼,味浓鲜香,肥而不腻。小贴士

  1、回锅肉的肉最好是选用带皮的五花肉,肥瘦肉各半,以六层肉最佳。这样做出来肥而不腻,味道香,口感也好。不会像纯瘦肉吃起来比较柴。2、五花肉切之前可以先放冷冻里冰一会,这样肉不会太软,比较好下刀,没那么吃力,带着皮的肉毕竟不好切。3、传统回锅肉中通常加入豆瓣酱,青蒜炒制而成,口味独特。没有豆瓣酱可以用豆豉代替。除此之外,怕辣的可以换成甜面酱,也可以用常见的老干妈炒制,味道也很不错。4、香哈辣酱味道比较咸,口味偏辣,不会吃辣的适量添加。5、所谓回锅肉就是肉再次回锅翻炒,我图方便就将肉撇到一边,大家也可以将炒好的肉先盛出,待配料炒好再将肉放回锅中炒制。

我每次在家制作回锅肉,不用五花肉,只用猪后臀部上面很小的那部分区域的肉来制作,那部分区域的肉炒出来呈卷曲状,吃起来带脆性,不油腻。用它来炒蒜苗回锅,那简直是绝配绝美。如果能买到山区里面用纯粮食喂养出来的猪身上这区域的猪肉,用它制作出来的蒜苗回锅肉,不说能香飘十里,至少能香飘50米。
